Browsing through these photos has made me day-dreamy for an exotic vacation. I gravitate toward more tropical destinations, so Greece, Croatia, and Bora-Bora are top on my list of must-see-before-I-die places.

Wouldn’t it be heavenly to stay in an over-the-water bungalow, swim in the Blue Caves, or dine in a cliff-side restaurant?

Sweet Potato & Black Bean Tacos

This little recipe is one of my staples, and something my girlfriends and I love to make together on a regular basis (and are a little obsessed with). It is marvelously simple to make, is great for lunch leftovers, and the mix of flavors is so unique and delightful. Who would have thought of balsamic glaze on a taco? Brilliant.

Assemble the following ingredients into soft corn or flour tortillas:

  • Roasted sweet potatoes (Preheat oven to 350°. Chop 4-5 sweet potatoes into small chunks, drizzle with olive oil, add salt and pepper to taste. Roast 30 mins or until tender/slightly crispy.)
  • Canned black beans, rinsed, drained, and warmed
  • Goat cheese crumbles
  • Arugula
  • Balsamic glaze (I found mine at Trader Joe’s, in the olive oil section.)
  • Kosher salt to taste

I wish I could give credit to the genius who thought of this amazing dish, but I’ve looked all over for the original recipe and have failed to find it. At any rate, I hope you enjoy it as much as I do (every week)!

Spring Style / Maxi Skirts

I am so glad maxi skirts are a big hit this year. They are the perfect blend of effortless, elegant, and comfy (and how gorgeous is the white pleated one on Jennifer Lawrence? To die for!). I’m looking forward to finding one or two affordable options for spring and summer. Here are a few ideas to start with.

Eating for One

While the Mr needs a lot of substance and comfort (and meat) in his meals at the end of the day, I’m always happy to create something simple with whatever I can find in the kitchen. Since he’s gone for training, I’ve gotten a kick out of seeing what I can dish up out of a seemingly empty fridge. It’s strangely gratifying, and the wallet and the waistline are definitely better off.

But needless to say, I’m ready to fill up the fridge with comfort food and share the dinner table again.

Do you eat differently when your man is away?

The weekend just evaporated, wouldn’t you agree? To start off a new week, here are a few pics of things that have brought me joy lately.

It will be a busy week of work, training for a charity relay race (more on that later) and visiting two (!) new babies that were both born in the last week to some dear friends.

I’ve felt a little nostalgic the last few days with Mr being gone.

This lovely song by Sleeping at Last is comforting on this cloudy morning… It reminds me that I don’t have to live life perfectly to be loved or held close. And that God is with me, whether my husband is or not.

A Peek at Portland

Portland has such a unique and natural beauty that you wouldn’t expect to find in a big city. We stayed with one of our dearest friends and her husband, who have lived there for nearly two years. They were such amazing hosts and showed us the best of the city! Here’s a peek. (ps, How incredible is their view? I could get used to waking up to this every morning.)

Saturday morning a few of us started the day with a little hike, right outside our door.

We had coffee and treats at Nuvrei, a great cafe and pastry shop. They had the most AMAZING macarons you’ve ever had (the salted caramel was my favorite).

There were so many amazing shops to explore. At Canoe, I found one of these rad cutting boards (plus mineral oil for conditioning) for the Mr.

At Palace, I scored this J. Crew cashmere sweater (my very first cashmere anything) for 30 bucks.

We took a break from shopping at Petunia’s, a vegan and gluten-free bakery.

On Sunday we had brunch at Olympic Provisions. Their eggs florentine and hot cakes with orange butter (one of which I stole from my friend to the left) were to die for! They also served Stumptown coffee, which was deliciously smooth and almost chocolatey.

It was such a lovely weekend, full of good food and good quality time with some of my favorite people. Portland is on the Mr’s most wanted list (he was so jealous he couldn’t go on this trip), so we’ll hopefully be making it up there again sometime this year.
